				<content:encoded><![CDATA[<p></p><p style="text-align: left;">As soon as I perfected this frozen treat, I couldn&#8217;t wait to post it. It took a few days and multiple test batches but I think I nailed it. Of course you will be the ultimate judge when you make this for yourself and your family. It&#8217;s cold, it&#8217;s creamy-sweet and it&#8217;s non-dairy. A nice, healthy addition to your summertime fun.</p>
<p><img class="alignleft size-medium wp-image-2717" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/06/bartell-juicing-still-jay-linda-02-crop-300x206.jpg" width="300" height="206" />Last week while Jay and Linda were demonstrating the new <a href="http://www.jaykordich.com/Introducing-The-Jay-Kordich-PowerGrind-Pro-Vitalit y-Hybrid-Juicer-P196.aspx?afid=578" target="_blank">PowerGrind Pro Vitality juicer</a> at the Bartell Drug Stores in the Seattle area, Linda decided to make a batch of Almond Milk &amp; Apple. We had just bought some mint to use in some fruit juice combinations so she decided to try putting some leaves through the juicer with the almonds. I had a big questioning look on my face. &#8220;Mint in with the almond milk?&#8221; I wasn&#8217;t so sure this would work out. Turns out it was delicious. The freshly made almond milk, fresh mint leaves and apples as the sweetener made a great almond milk drink.</p>
<p><img class="alignright size-medium wp-image-2729" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/06/almond-mint-ice-cream-6-18-13-crop-300x257.jpg" width="300" height="257" />I began wondering how this almond/mint combo would work if put into an ice cream freezer. Turns out it wasn&#8217;t quite that simple. The recipe needed some adjustments to make it work as a frozen dessert. But the experiments to get the ingredients and amounts just right were well worth it. The results were so good I couldn&#8217;t stop eating all the test batches!</p>
<p>Unlike when making regular almond milk, this recipe calls for 100% Fuji apple juice as the liquid instead of water. This is because when you freeze the mix, the sweetness level will go down considerably. Using all apple juice instead of water was the solution.</p>
<h2>Almond Mint Vegan Ice Cream.</h2>
<p><em>[This recipe was created using the <a href="http://www.jaykordich.com/TVOffer.aspx?afid=426" target="_blank">Jay Kordich PowerGrind Pro Longevity Juicer</a> and applies to both the Longevity and the <a href="http://www.jaykordich.com/Introducing-The-Jay-Kordich-PowerGrind-Pro-Vitalit y-Hybrid-Juicer-P196.aspx?afid=578" target="_blank">Vitality juicer</a>]</em></p>
<h3>Recipe:</h3>
<p>- 1  1/2 cups fresh Fuji apple juice,  (about 3 mid to large size Fuji apples).<br />
- 10 to 12 mint leaves.<br />
- 1/2 teaspoon vanilla or 1/2 raw vanilla bean.<br />
- 1 heaping cup soaked almonds.<br />
(12 to 24 hours soaking time, then rinse well. Measure 1 cup after soaking)<br />
- 2 pitchers, one for the apple/mint juice and one for final almond/apple/mint mix.</p>
<h3>Procedure:</h3>
<p>Start by making the apple/mint juice. Put pitcher #1 under the juicer spout.<br />
Use Fuji apples for the extra sweetness. Quarter the apples.<br />
After the first piece or two of apple, put in the handful of mint leaves and<br />
run them through with the rest of the apple pieces.<br />
You want 1  1/2 cups apple juice.</p>
<p>Set aside the pitcher with the apple/mint juice and put pitcher #2 under the juicer spout.<br />
Put the plunger all the way down and put 1/2 cup of the almonds in the rear chute.<br />
Put pieces of vanilla bean in with the almonds if you want or add liquid vanilla extract later.<br />
Lift up the plunger and let the almonds drop into the juicer.<br />
After they grind for a bit, gently push the plunger down to help with the grinding, but don&#8217;t push too much. While bobbing the plunger up and down, slowly pour in about 1/2 of the apple/mint juice in the rear chute to wash the almond milk through the juicer.</p>
<p>Put the plunger all the way down again and pour the other 1/2 cup of almonds in the rear chute. Lift the plunger to let the almonds drop into the juicer. Let them grind for a bit then repeat your action from above and pour the rest of the apple/mint juice through your juicer.  Add vanilla extract to the mix if you did not use vanilla bean earlier.<br />
You should get about 2 cups of mixture.</p>
<p>Pour the mix into an ice cream freezer, like a Cuisinart. Freeze for about 15 or 20 minutes.<br />
The result is somewhere between ice cream and sorbet.</p>
<p><img class="alignright size-medium wp-image-2730" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/06/almond-mint-zipcicles-6-18-13-crop-300x180.jpg" width="300" height="180" />While we were demonstrating our juicer in Bartells last week I saw a product for sale called Zipzicle. These zip-lock bags come 12 to a package. Our Almond Mint recipe made great &#8220;zipzicles&#8221;.</p>
<p>The frozen dessert made from this recipe is not something you can save in a single large container in the freezer because it will end up being very hard and not scoop-able. However you can make great popsicles and &#8220;zipzicles&#8221;. The best way to consume this tasty treat is as soon as you scoop it out of your ice cream freezer.</p>

<h3><strong>Differences in Blood Glucose Indexes and Why This is Important</strong></h3>
<p>One of the more interesting things about watermelon is how the sugar content effects blood glucose.  A few decades ago a new index was developed called the <a href="http://en.wikipedia.org/wiki/Glycemic_index" target="_blank">Glycemic Index</a> (GI). It measures how quickly the food item can raise your blood glucose level. But the amount of food used to determine the index number is larger than most people would consume.</p>
<p><img class="alignright size-full wp-image-2686" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/06/National_Watermelon_Day_2012_freecomputerdesktopwallpaper_p.jpg" width="400" height="300" />Another way to measure the impact of various foods on our blood glucose is called <a href="http://en.wikipedia.org/wiki/Glycemic_load" target="_blank">Glycemic Load</a> (GL). This new measure gives us a more realistic indication of what to expect when we consume, say, watermelon. For instance The GI of watermelon is 72, which is quite high. However the GL of watermelon is only 7. This is because watermelon is only 6% sugar and 91% water and this helps balance out your body&#8217;s response, glucose wise, to watermelon and it&#8217;s juice. Additionally, when you juice it with the rind, you are lowering the relative sugar content in a glass of juice even more.</p>
<h3><strong>Blood Pressure Lowering Effects Without Drugs</strong></h3>
<p>Another great part about making watermelon juice as opposed to eating it is the white rind. Most people do not eat that part, however this is where many benefits are found, especially the blood pressure lowering effect of <a href="http://www.webmd.com/erectile-dysfunction/news/20080701/watermelon-a-natural-viagra" target="_blank">high concentrations of citrulline.</a></p>
<p>The body converts citrulline to the amino acid arginine by using enzymes. Arginine works with the heart and circulation system to maintain a healthy immune system.</p>
<p>This citrulline-arginine relationship also boosts nitric oxide which relaxes the blood vessels, the very same thing Viagra does. This helps with high blood pressure and other heart problems. Watermelon has been shown in the latest studies to<a href="http://www.sciencedaily.com/releases/2008/06/080630165707.htm" target="_blank"> lower blood pressure</a> just as effectively as drugs and with zero side effects.</p>
<p>The raw, natural water of the watermelon, rind and all, is loaded with enzymes, minerals and vitamins the body craves therefore you are doing yourself a big favor by drinking a glass of watermelon juice.</p>

<p>In today&#8217;s interview we learn Jay was diagnosed with cancer in his early 20s. He tells us about deciding to follow Dr. Max Gerson&#8217;s therapy and takes us through the plan itself. After overcoming his illness, Jay says he found his calling in life &#8211; to travel the country demonstrating juicers and teaching us how simple and effective it can be to take charge of our own health with freshly made juice.</p>
<p>Jay Kordich will be 90 years old this summer. Known as The Father Of Juicing, Jay&#8217;s knowledge about nutrition, how the body works and juicing in particular has been the foundation of his life&#8217;s work from the 1950s right up to today.</p>

<p>Mother&#8217;s Day is just around the corner and it started me thinking about all the many years I was able to spend with my mom and my dad too.</p>
<p>Even though she is no longer with us I remember the days when I&#8217;d visit with her and my dad at their home in San Pedro, CA.  She would fix Linda and I great dinners with all the traditional foods, prepared fresh from local ingredients. My mom was a great cook and I really miss those days we&#8217;d spend together.</p>
<p>My mother lived a long and healthy life, passing away at 94 years old. I had her drinking freshly made juices for almost 50 years and I believe this helped her stay young and vibrant till the day she died.</p>

<p>Jay Kordich will be 90 years old this summer. Known as The Father Of Juicing, Jay&#8217;s experience and knowledge about nutrition, how the body works and juicing in particular has been the focus of his learning and teaching others from the 1950s right up to today.</p>

<p>Recently we sat down with Jay for a multi-hour video interview covering a wide variety of topics. The information flowing from him was so extensive that we have decided to post the interview in five parts over so many weeks. Today we post Part One, Growing Up. Jay gives us a snapshot of his early life and talks about his parents and his interest in sports.</p>
<p>Watch today&#8217;s interview and learn from Jay how a life filled with purpose and determination can lead to happiness and living disease free. It&#8217;s not even one of the &#8220;in&#8221; veggies or fruits or &#8220;the latest thing&#8221; either. But the fact is that red beets &#8211; whether made into juice, used in fresh salads or added to cooked dishes &#8211; pack a lot of power into such a small size.</p>
<p><a href="http://blog.jaykordich.com/wp-content/uploads/2011/08/4576333533_f5329acaf0_o.jpg" rel="shadowbox[sbpost-2511];player=img;"><img class="alignright size-medium wp-image-904" alt="4576333533_f5329acaf0_o" src="http://blog.jaykordich.com/wp-content/uploads/2011/08/4576333533_f5329acaf0_o-225x300.jpg" width="225" height="300" /></a><a href="http://newsroom.heart.org/news/drinking-cup-of-beetroot-juice-daily-may-help-lower-blood-pressure" target="_blank">The most recent study</a> written up in the American Heart Association web site, is showing that drinking beet juice can reduce blood pressure. The scientists tell us it has this effect by way of the nitrate it contains. Nitrates, converted into nitrites in the body, have the ability to improve blood flow by opening the arterial walls and making it easier for the Heart to do it&#8217;s job. The results also tell us that the effect from the beet juice lasts well past the hours when you drink it. Their tests revealed continued lowering of BP into the next day as well.</p>
<p>Study participants with high blood pressure drank 8 ounces of beet juice daily. The results showed a decrease in blood pressure of about 10 mm Hg. The researchers said, “Our hope is that increasing one’s intake of vegetables with a high dietary nitrate content, such as green leafy vegetables or beetroot, might be a lifestyle approach that one could easily employ to improve cardiovascular health,” said Amrita Ahluwalia, Ph.D., lead author of the study and a professor of vascular pharmacology at The Barts and The London Medical School in London.</p>
<p>Our own experience has shown that when making beet juice fresh, it&#8217;s good practice to start slowly with the size of beet used in the recipe. Perhaps a 1/4 of a beet at first, then work your way up to a whole beet as you become accustomed to their cleaning power. To receive the benefits of beet nitrates, evidence has shown we need less beets or beet juice if they are fresh because cooking of beets lowers the nitrate level.</p>
<p>Jay has been an advocate for making beet juice for decades. 				<content:encoded><![CDATA[<p></p><p>Being almost 90 years old has given me a deeper understanding as to why we have lost our children to the fast food lifestyle as well as being victim to an over-stimulated world.  I have been around a long enough time to vividly remember that our country was quite different before the 1950s.</p>
<p><img class="alignright size-full wp-image-2471" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/04/Swanson+TV+Dinner+ad+Bayswater97+Flickr.jpg" width="305" height="400" />Back in the early 1950s most Americans gave up gardening habits and started buying frozen TV dinners and frozen canned vegetables to replace the fresh foods people were growing in their gardens. Marketing experts called canned foods the “foods of preference&#8221;. They also marketed them as being “modern”.  Another slogan I remember was “Why slave over a hot stove like your mother did, when you can have dinner in an instant”.</p>
<p>There became a stigma attached to home gardening as if it were old fashioned and relegated now only to the poor. This concept took off like wildfire and before long, by the mid 1950s, women also started working longer hours, needing the convenience of purchasing canned and “convenience” meals. Little did we know just how far convenience would take us down the dark path towards many levels of disease we are suffering from today.  I see these negative ramifications manifesting now as diseases of our internal organs, diseases of our minds and the worst…..diseases of our soul.</p>
<h3><strong>What was life like prior to the 1950&#8242;s? </strong></h3>
<p>Everybody in our neighborhood naturally had their own gardens in their backyards. I grew up in the Los Angeles area called San Pedro, where it was sunny almost every day of the year.  Even to the last day of my father&#8217;s life, (he lived to be 103 years old) he was growing spinach, parsley and lettuce in their small backyard.  He tended his garden every day and I’ll never forget the fragrant and hearty parsley he proudly grew year round.</p>
<p>For years, when Linda and our family would visit him, prior to us leaving my parent’s home, he would ask my mother to wash and wrap up handfuls of fresh parsley for us to take home.  This was like gold to me.  I will never forget these experiences I had while growing up and almost 90 years later.</p>
<p><img class="wp-image-2473 alignleft" alt="parsley" src="http://blog.jaykordich.com/wp-content/uploads/2013/04/parsley.png" width="203" height="236" />I feel the same love and gratitude for my father, instilling this love for gardening, the same way I did as a boy.  He taught me these principles at a young age, about respecting Mother Earth and how to be patient with her, how to amend the soil and how much to water. More than all of this, I mostly remember his strong hands and gentle nature as he guided me through this process.  This is likely why, when I became ill, almost 65 years ago, I instinctively turned towards nature for healing.</p>
<p>These are the priceless memories and gifts every child deserves to have. I believe it’s our inherent right to know how to garden, just like it’s our inherent right to become educated and to have proper health care provided to each and every American.</p>
<h3><strong>A Garden for Every Child. Every Child in a Garden</strong></h3>
<p><img class="alignright  wp-image-2478" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/04/tumblr_m3g99dKJS11qjih96o1_500.jpg" width="279" height="420" />Let&#8217;s look back and what our government was advocating back in the early 1900&#8242;s. The photo to the right was from around 1915, advocating the U.S. Government&#8217;s youth gardening program in World War 1. The tag line for the photo was “A Garden for Every Child. Every Child in a Garden.”</p>
<p>Wouldn’t this be a great idea today?  Instead of national educational programs such as “Race to the Top,” why not advocate for a nationally mandated curriculum that promotes food systems education in ALL American public schools?</p>
<p>We are living in an addictive world. We are &#8211; seemingly &#8211; helplessly becoming hypnotized and addicted to the electronic world, instead of being in harmony with our Earth and with each other.</p>
<p>We are allowing and relying too much on electronic communications and media and as a result, we are rapidly losing our human connection. Our children lose themselves in illusion via electronic airwaves, violent television shows, electronic games, violent video games adding up to 100 hours a week per child, (on average).</p>
<p>It reminds me of the movie Poltergeist, where the children from the family being haunted, literally getting sucked up inside the television, ultimately needing an exorcism of sorts to retrieve their souls.</p>
<p>At times I feel helpless, because there is nothing I can do about this on my own. Collectively however, we can wake up from this nightmare our children are trapped in, retrieve them from these illusory images they are hypnotized to and start to introduce the outdoor life, to gardening, to tending to fruit trees and home gardens and school gardens, and to bicycles and sunshine and all the unspoken benefits of living a meaningful human life.</p>
<h3><strong>Let Us Begin With Gardening</strong></h3>
<p><img class="size-medium wp-image-2483 alignright" alt="" src="http://blog.jaykordich.com/wp-content/uploads/2013/04/13gardening_800px-300x231.jpg" width="300" height="231" />Some of the best models for school gardens lie in our past. Luckily I&#8217;m old enough to remember these programs. Everybody in our neighborhood had gardens, and in fact, it was strange for our neighbors &#8216;not&#8217; to have gardens.</p>
<p>The real potential of a school garden back then was to encourage Americans to grow their own food because of the scarcity of money, and to help people get through the tough times of war.  Today our needs to grow gardens are very similar but also quite different.</p>
<p>We are in a WAR with an epidemic of obesity and diabetes. We must find a way to encourage a healthy lifestyle, to reconnect our impressionable children with the maternal and mysterious knowledge that Mother Nature brings to us that will naturally help build healthier, vibrant, compassionate and responsible future lives for our children, and even our communities.</p>
<p>Mandating school and community gardens might be good national public policy in America!  Just like children are asked to read a certain curriculum in social studies, math or science, introducing gardening is simple and inexpensive and crucial to the future of humanity.</p>
<p>Children must have fresh air, outdoor life and they must learn to respect and honor our earth, starting first with understanding how to grow fruits, vegetables, grains, legumes, herbs and fruit and nut trees.</p>
<p><img class="alignleft  wp-image-2498" alt="Jay in the garden 4-18-13" src="http://blog.jaykordich.com/wp-content/uploads/2013/04/jay-in-the-garden-4-18-13-web.jpg" width="288" height="434" />What could be better than combining the knowledge from Mother Nature, at the same time getting sunshine and educating each and every one of our children to learning all about the healing benefits our Mother Earth has provided for us.</p>
<p>This is my deepest prayer and dream for the future. I can’t expect to bring back the good old days, because I know that’s not practical, but let’s take the best from the past and incorporate gardening into our daily lives!  It’s a must if we are to evolve out of these diseases that haunt and torture our bodies, our minds and our souls.</p>
<p>God didn’t create us to live forever, but our children are our future.  They will be the stewards of our planet. Let’s help our children learn these priceless principles to help us all build better health from the ground up.</p>
