Foodie Fridays with Friends: Super Dates!

Anybody for a Super DATE? Well, if you don’t want to date anybody – why not make some dates yourself? Pick up a good book or your digital tablet and make these fantastic little goodies… It makes for a great date… literally!

Here’s the recipe:

1 cup soaked Almonds (soak them overnight)
(make sure to rinse them before you use them)
1 cup Medjool dates (pitted)
1 cup coconut flakes

  1. Put the almonds and dates into a food processor and pulse for about 30 seconds or until you achieve desired consistency.
  2. Add the coconut flakes, then roll into one inch balls and place onto cookie sheet and refrigerate for a few hours. (Quick fix: Place in the freezer for an hour or so and you are ready!)
  3. We  love these date balls, and you can do so many different varieties.

Protip: Try making fresh almond milk with these babies….warm up the almond milk and HAVE AT IT! Now that’s a great date.
