Interview with Jay Kordich – Part Two Cancer Diagnosis & Gerson Therapy

[This is Part Two of a Five Part Series of interviews with Jay Kordich.]

In today’s interview we learn Jay was diagnosed with cancer in his early 20s. He tells us about deciding to follow Dr. Max Gerson’s therapy and takes us through the plan itself. After overcoming his illness, Jay says he found his calling in life – to travel the country demonstrating juicers and teaching us how simple and effective it can be to take charge of our own health with freshly made juice.

Jay Kordich will be 90 years old this summer. Known as The Father Of Juicing, Jay’s knowledge about nutrition, how the body works and juicing in particular has been the foundation of his life’s work from the 1950s right up to today.

Anti-Cancer Anti-Inflammatory Properties of Apigenin

Foods with ApigeninLast year I wrote two blog posts about the compound, Apigenin. We covered the latest research about this bioflavonoid, (actually a flavone) and how it was showing very promising anti-breast cancer results. Because the information surrounding apigenin is mounting, in this post I wanted to dig a little deeper and present more findings about some of the results other studies are showing. Also I’ll list more of the plants where this flavone is found so you can put them to use in your daily juices and salads.

Reduced Breast Cancer Tumors And Cell Progression

As I mentioned above, apigenin was shown to cause the development of less breast cancer tumors and also significant delays in tumor development compared to rats that were not given this compound. In another study Apigenin was shown to reduce breast cancer cell progression with mice. In addition this compound also shrank existing cancer tumors for even stronger evidence to suggest further research as an alternative to chemotherapy for the treatment of breast cancer.

Exhibits Anti-Inflammatory Properties

As more studies are undertaken to look further into the benefits of consuming plants that contain this valuable compound, recent studies show apigenin to possess anti-inflammatory and neuroprotective properties separate from well-known anti-oxidant effects. One study concludes these in vitro studies provide further evidence to suggest that this compound “may have neuroprotective/disease-modifying properties in various neurodegenerative disorders, including Alzheimer’s disease (AD).”

High Concentrations Available From Plants

Apigenin can be found in a number of vegetables, herbs and fruits. It’s most concentrated in parsley, celery, grapefruits and oranges. It’s also found in herbs such as thyme, tarragon, cilantro, foxglove, coneflower, licorice, flax, passion flower, horehound, spearmint, basil and oregano. Chamomile tea provides an especially abundant source as well.

Day Two – Potassium Broth

- Handful of parsley
- Two or three carrots
- Handful of spinach
- Two or three celery stalks

A recent study published in Cancer Prevention Research demonstrates how a compound found in parsley, when given to rats with breast cancer, caused the development of less tumors and also significant delays in tumor development compared to rats that were not given this compound. It’s called apigenin, commonly found in many plants but more highly concentrated in parsley.

Salman Hyder, the Zalk Endowed Professor in Tumor Angiogenesis and professor of biomedical sciences in the University of Missouri-Columbia’s College of Veterinary Medicine and the Dalton Cardiovascular Research Center, gave the substance apigenin to rats with a particular form of breast cancer. Apigenin is not only found in parsley but also lower concentrations in celery, apples, oranges, nuts and other plants.

Some are calling this groundbreaking research because it shows how an easy to obtain, natural substance can stop certain breast cancer tumor cells from multiplying and growing without the negative impacts associated with drugs and hormone replacement therapies.

Dr. Hyder found apigenin blocked new blood vessel formation and therefore slowed and sometimes totally stopped the development of tumors. “We don’t have specific dosage for humans yet,” Dr. Hyder said in a media statement, “However, it appears that keeping a minimal level of apigenin in the bloodstream is important to delay the onset of breast cancer. It’s probably a good idea to eat a little parsley and some fruit every day to ensure the minimal amount.”

Ginger Found To Inhibit Breast Cancer Cells

More good news about plants for prevention and treatment of disease. A recent study published in the Journal of Biomedicine and Biotechnology has shown ginger to inhibit growth of breast cancer cells, while simultaneously not prohibiting the growth of health cells nearby. As we know, this behavior is not typical of conventional cancer treatments and it’s one of the reasons this research is exciting.

Breast Cancer Cells Killed Using Ginger

The study terms can get pretty arcane, but here goes some of the quotes from the research:
Ginger treatment suppressed the proliferation and colony formation in breast cancer cell lines, MCF-7 and MDA-MB-231. Meanwhile, it did not significantly affect viability of nontumorigenic normal mammary epithelial cell line (MCF-10A). Treatment of MCF-7 and MDA-MB-231 with ginger resulted in sequences of events marked by apoptosis, accompanied by loss of cell viability, chromatin condensation, DNA fragmentation, activation of caspase 3, and cleavage of poly(ADP-ribose) polymerase.

Still with me?  I know it’s technical stuff and if you read even more of the study, you very clearly understand that the scientists had discovered something important. The properties of ginger had shown ability to selectively kill cancer cells while not significantly affecting the non-tumor cells. This anti-cancer activity was positive enough that the scientists made this statement:
These findings suggest that the ginger may be a promising candidate for the treatment of breast carcinomas.

Of course more studies are coming. More universities and researchers will be looking into these new findings and expanding on them. Spinach Power For Eyes And Cancer

Looking for an easy way to green-up your juices and salads?  Spinach is one of the Kings of Green. With the ever present tubs of organic, washed baby spinach at most supermarkets, what could be simpler than throwing a handful of spinach into your juice combinations or salad mix.

Numerous studies are showing the benefits of spinach and more research is on-going. Cardiovascular disease including stroke and coronary artery disease. Cancer, including colon, lung, skin, stomach, prostate and breast cancer. Eye health including cataracts. It may also help with age related cognitive decline.

COLOR in your Juice?

To stay vitally healthy….being cognizant of adding concentrated vibrant color in our diet and in our juices is quite important.  Linda and I juice by color….and we suggest that this tonic will light up your brain cells for optimum memory and on top of that, it helps reduce cancer risk.

Here’s my TONIC to do JUST this!!

1 cup Purple (with seeds please) Grapes
2 cups Blueberries or Blackberries
2 Plums (de-seeded)
1 or 2 Bartlett Pears

Now that’s Brain Power!..Please never forget the power of concentrated COLOR in your foods.  Don’t care for fresh fruit juices?  Here’s another TONIC that is derived from the powerhouse PURPLE cabbage.  It even looks like a brain.  Amazing how Nature is so illustrious and creative.

2 cups Purple Cabbage
2 dark Red (Delicious) Apples ***
1/2 Beet with 2 of its beetroot leaves

*** If you do not juice apples for blood sugar/glycemic reasons, you can substitute 1 large cucumber for 2 apples.

Broccoli Studied for Cancer Prevention

As we have written previously, broccoli has been shown in numerous studies to help in the prevention of many different types of cancer. The properties being studied are in the group of cruciferous vegetables that include not only broccoli but also brussels sprouts, cauliflower and cabbage. They can contain significant quantities of glucosinolates, which are metabolized into isothiocyanates (ITCs). The ITC sulforaphane (SF) is now being studied for the strong connection of it’s ability to destroy cancer cells in lab experiments.

We are seeing more and more evidence that increased dietary consumption of SF-containing cruciferous vegetables is showing a reduction of chronic and degenerative disease. Science has suggested a number of possible mechanisms for the relationship between less disease and the larger amount of SF in the diet but the strongest evidence continues to be the vehicle of SF’s role in metabolizing antioxidant enzymes.

Also of particular interest are the sprouts of broccoli which have been observed to include 10 to 100 times the amount of enzyme inducers that protect against carcinogens. Just like you have the ability to make your own glass of great tasting vegetable juice at home that includes broccoli or cabbage, it’s also easy to grow your own sprouts as well.

Here’s a tip for using broccoli in your green juices. While it’s true the florets of broccoli are higher in beta-carotene, the stalks provide large amount of the researched nutrients mentioned above. Use the stalks when juicing with your Jay Kordich PowerGrind Pro juicer because they are sometimes not easy to consume in raw salads. If you also were to grow your own broccoli sprouts and add them to your salads and sandwiches, this would provide optimum levels of all the cancer-preventing nutrients of the resent studies.

Important Differences between Fruit and Vegetable Juices

Fruit and vegetable juices are the cleansers, energizers, builders, and regenerators of the human system. Specifically, fruits are our cleansers and energizers and vegetable juices are our builders, and regenerators.  Freshly extracted fruit or vegetable juices will supply all the enzymes, vitamins, minerals, protein, and some fats critical to increased vitality!
