Interview with Jay Kordich – Part One Growing Up

[Today we are releasing Part One of a Five Part Series of interviews with Jay Kordich.]

Jay Kordich will be 90 years old this summer. Known as The Father Of Juicing, Jay’s experience and knowledge about nutrition, how the body works and juicing in particular has been the focus of his learning and teaching others from the 1950s right up to today.

Recently we sat down with Jay for a multi-hour video interview covering a wide variety of topics. The information flowing from him was so extensive that we have decided to post the interview in five parts over so many weeks. Today we post Part One, Growing Up. Jay gives us a snapshot of his early life and talks about his parents and his interest in sports.

Beet Juice Is Shown To Lower Blood Pressure

This vegetable is showing up more often in the research as of late. It’s not even one of the “in” veggies or fruits or “the latest thing” either. But the fact is that red beets – whether made into juice, used in fresh salads or added to cooked dishes – pack a lot of power into such a small size.

4576333533_f5329acaf0_oThe most recent study written up in the American Heart Association web site, is showing that drinking beet juice can reduce blood pressure. The scientists tell us it has this effect by way of the nitrate it contains. Nitrates, converted into nitrites in the body, have the ability to improve blood flow by opening the arterial walls and making it easier for the Heart to do it’s job. The results also tell us that the effect from the beet juice lasts well past the hours when you drink it. Their tests revealed continued lowering of BP into the next day as well.

Study participants with high blood pressure drank 8 ounces of beet juice daily. The results showed a decrease in blood pressure of about 10 mm Hg. The researchers said, “Our hope is that increasing one’s intake of vegetables with a high dietary nitrate content, such as green leafy vegetables or beetroot, might be a lifestyle approach that one could easily employ to improve cardiovascular health,” said Amrita Ahluwalia, Ph.D., lead author of the study and a professor of vascular pharmacology at The Barts and The London Medical School in London.

Our own experience has shown that when making beet juice fresh, it’s good practice to start slowly with the size of beet used in the recipe. Perhaps a 1/4 of a beet at first, then work your way up to a whole beet as you become accustomed to their cleaning power. To receive the benefits of beet nitrates, evidence has shown we need less beets or beet juice if they are fresh because cooking of beets lowers the nitrate level.

Losing Our Children To Fast Food – There Is A Solution

Being almost 90 years old has given me a deeper understanding as to why we have lost our children to the fast food lifestyle as well as being victim to an over-stimulated world.  I have been around a long enough time to vividly remember that our country was quite different before the 1950s.

Back in the early 1950s most Americans gave up gardening habits and started buying frozen TV dinners and frozen canned vegetables to replace the fresh foods people were growing in their gardens. Marketing experts called canned foods the “foods of preference”. They also marketed them as being “modern”.  Another slogan I remember was “Why slave over a hot stove like your mother did, when you can have dinner in an instant”.

There became a stigma attached to home gardening as if it were old fashioned and relegated now only to the poor. This concept took off like wildfire and before long, by the mid 1950s, women also started working longer hours, needing the convenience of purchasing canned and “convenience” meals. Little did we know just how far convenience would take us down the dark path towards many levels of disease we are suffering from today.  I see these negative ramifications manifesting now as diseases of our internal organs, diseases of our minds and the worst…..diseases of our soul.

What was life like prior to the 1950′s? 

Everybody in our neighborhood naturally had their own gardens in their backyards. I grew up in the Los Angeles area called San Pedro, where it was sunny almost every day of the year.  Even to the last day of my father’s life, (he lived to be 103 years old) he was growing spinach, parsley and lettuce in their small backyard.  He tended his garden every day and I’ll never forget the fragrant and hearty parsley he proudly grew year round.

For years, when Linda and our family would visit him, prior to us leaving my parent’s home, he would ask my mother to wash and wrap up handfuls of fresh parsley for us to take home.  This was like gold to me.  I will never forget these experiences I had while growing up and almost 90 years later.

parsleyI feel the same love and gratitude for my father, instilling this love for gardening, the same way I did as a boy.  He taught me these principles at a young age, about respecting Mother Earth and how to be patient with her, how to amend the soil and how much to water. More than all of this, I mostly remember his strong hands and gentle nature as he guided me through this process.  This is likely why, when I became ill, almost 65 years ago, I instinctively turned towards nature for healing.

These are the priceless memories and gifts every child deserves to have. I believe it’s our inherent right to know how to garden, just like it’s our inherent right to become educated and to have proper health care provided to each and every American.

A Garden for Every Child. Every Child in a Garden

Let’s look back and what our government was advocating back in the early 1900′s. The photo to the right was from around 1915, advocating the U.S. Government’s youth gardening program in World War 1. The tag line for the photo was “A Garden for Every Child. Every Child in a Garden.”

Wouldn’t this be a great idea today?  Instead of national educational programs such as “Race to the Top,” why not advocate for a nationally mandated curriculum that promotes food systems education in ALL American public schools?

We are living in an addictive world. We are – seemingly – helplessly becoming hypnotized and addicted to the electronic world, instead of being in harmony with our Earth and with each other.

We are allowing and relying too much on electronic communications and media and as a result, we are rapidly losing our human connection. Our children lose themselves in illusion via electronic airwaves, violent television shows, electronic games, violent video games adding up to 100 hours a week per child, (on average).

It reminds me of the movie Poltergeist, where the children from the family being haunted, literally getting sucked up inside the television, ultimately needing an exorcism of sorts to retrieve their souls.

At times I feel helpless, because there is nothing I can do about this on my own. Collectively however, we can wake up from this nightmare our children are trapped in, retrieve them from these illusory images they are hypnotized to and start to introduce the outdoor life, to gardening, to tending to fruit trees and home gardens and school gardens, and to bicycles and sunshine and all the unspoken benefits of living a meaningful human life.

Let Us Begin With Gardening

Some of the best models for school gardens lie in our past. Luckily I’m old enough to remember these programs. Everybody in our neighborhood had gardens, and in fact, it was strange for our neighbors ‘not’ to have gardens.

The real potential of a school garden back then was to encourage Americans to grow their own food because of the scarcity of money, and to help people get through the tough times of war.  Today our needs to grow gardens are very similar but also quite different.

We are in a WAR with an epidemic of obesity and diabetes. We must find a way to encourage a healthy lifestyle, to reconnect our impressionable children with the maternal and mysterious knowledge that Mother Nature brings to us that will naturally help build healthier, vibrant, compassionate and responsible future lives for our children, and even our communities.

Mandating school and community gardens might be good national public policy in America!  Just like children are asked to read a certain curriculum in social studies, math or science, introducing gardening is simple and inexpensive and crucial to the future of humanity.

Children must have fresh air, outdoor life and they must learn to respect and honor our earth, starting first with understanding how to grow fruits, vegetables, grains, legumes, herbs and fruit and nut trees.

Jay in the garden 4-18-13What could be better than combining the knowledge from Mother Nature, at the same time getting sunshine and educating each and every one of our children to learning all about the healing benefits our Mother Earth has provided for us.

This is my deepest prayer and dream for the future. I can’t expect to bring back the good old days, because I know that’s not practical, but let’s take the best from the past and incorporate gardening into our daily lives!  It’s a must if we are to evolve out of these diseases that haunt and torture our bodies, our minds and our souls.

God didn’t create us to live forever, but our children are our future.  They will be the stewards of our planet. Let’s help our children learn these priceless principles to help us all build better health from the ground up.

How to Make Green Juices Taste Delicious

It’s our Magic 3 – and boy are they magical.  It’s amazing just how much they can change the way our taste buds react to the darker green juice combinations.  Even your children will love them, and oh yes, even your reluctant partner in love.

Here is the easiest way to make those dark green juices come alive and taste spectacular!


  1. Limes/Lemons
  2. Fresh Mint (Spearmint and Peppermint are the best tasting)
  3. Apples or Pears


If you use the following leafy and nutritious greens, then our Magic 3 can work magic on the taste. The TOP Greens, nutrition wise,  not in any specific order are kale, spinach, parsley, swiss chard, collards, turnip greens, mustard greens, broccoli, green and red romaine lettuces and green and red cabbage.

Here is a good example of how to balance out your green drinks. Make your juice combo have these percentages:

  • 80% from any one of the top greens above
  • 10% from apples or pears
  • 10% from lemons or limes

If you leave the peel on the limes and/or lemons, this will make your drink stronger. If your produce is not organic, please never use the skin, but double up on the lime and/or lemons because without the skin, they are not as potent.  So, for example, if you are using 1  lime with skin, we say use 2 limes without the peel.

One Fruit And No More!

We do not recommend adding any other fruit into the green juice combinations because if you add too much fruit,  you will mitigate any real value in absorption of nutrients and the drink becomes much less alkaline.  The whole idea is to absorb nutrients and to receive the benefits of the high alkalinity from these green juices. That’s why we limit the sweetness to only 10% of the drink.  Keep it down to 10% and you’ll be fine, even if you want to add 10% of pineapple as the only sweetener.  I don’t recommend it, but if you must, then just do the 10%.

Mint Can Be A Great Addition

Add as much of the mint into the drinks as you like because they are a leafy herb, rich in nutrients and very low in sugars.  Even the limes or lemons can be extended to 20% if you have to in the beginning, to start to train your taste buds to like the green juices.  But I am asking you not to add too much fruit.  The secret is to add more mint to the drink if you are struggling along with a lime.

Research Confirms Organic Tomatoes Contain More Nutrients

tomato nutrition info Organic fruits and vegetables are coming on strong lately. They are available at larger numbers of markets around the country and the price, in many cases, is starting to be more competitive with conventional produce. This is why over the last year or so, when we see stories about how organically grown offers few advantages to conventional and cost higher to boot, it has sometimes been tough to justify spending the extra effort to find organic produce as well as spend the extra cash to purchase them.

Now a new piece of research is not only challenging the “organic is no different” notion when it comes to important nutrients that promote better health, it is also showing that organic tomatoes taste better too.

Organic Farming Impacts Quality of Tomatoes

This latest tomato study is showing impressively higher percentages of nutrient levels for the organically grown versions versus their conventional counterparts. The French and Brazilian researchers, affiliated with France’s University of Avignon and Brazil’s Federal University Ceara compared organic tomatoes grown in the Northeast region of Brazil with conventionally-grown tomatoes grown in the same region under similar conditions.

The scientists looked at many different factors including antioxidants, phenols, anthocyanin, flavoniods, vitamin C, enzyme activity, chlorophyll and peroxidation, pH and finally brix level, which is sweetness.

The results show organic tomatoes at their ripe stage, contained substantially higher levels of many nutrients important to promoting health and, as an added bonus, they were sweeter and better tasting than conventional samples. Here are some of the numbers:

  • 139% higher levels of total phenolic.
    (Polyphenols are plant compounds that have been shown to help prevent heart disease, cancer and have anti-inflammatory and anti-aging properties)
  • 140% higher phenylalanine ammonia lyase levels, related to enzyme activity.
    (Higher enzyme activity is most likely related to higher plant stress, which is also likely to have increased the phenol levels. Both are related to the plant having to work harder to grow to maturity, unaided by chemical sprays and insecticides)
  • 90% higher antioxidant potency as measured by superoxide dismutase levels.
    (This looks at free radical scavenging potential)
  • 72% higher yellow flavonoid content
  • 57% higher levels of vitamin C
  • 28% higher levels of acidity – % of citric acid
  • 57% higher brix levels, the sweetness of the fruit

The researchers, in their own words:

Our work clearly demonstrates that tomato fruits from organic farming have indeed a smaller size and mass than fruits from conventional growing systems, but also a substantially better quality in terms of concentrations in soluble solids and phytochemicals such as vitamin C and total phenolic compounds.

Until recently, the focus has been mainly on yield rather than on gustative and micronutritional quality of fresh plant products. This might be all right for staple food, but, as far as fruits and vegetables are concerned, it may be argued that gustative and micronutritional quality matter more than energy supply. Our observations suggest that, at least for fruit and vegetable production, growers should not systematically try to reduce stress to maximize yield and fruit size, but should accept a certain level of stress as that imposed by organic farming with the objective of improving certain aspects of product quality.

Better Taste. Better Nutrition. It’s Organic!

What it comes down to is this — organic tomatoes can offer you a better value if higher nutrient levels and better taste are attributes you consider important. Additional research is being conducted to take measurements from a wide variety of organic versus conventional produce and we will publish those study results as they become available.  Meanwhile, how about a V-12?

V-12 Super Juice
- handful spinach
- handful parsley
- handful cilantro
- 1 large vine-ripened tomato, cut into wedges
- 1/2 red bell pepper
- 1 clove garlic
- 8-10 medium-sized carrots, trimmed

Juice the spinach, parsley, and cilantro, bunching up the greens as you feed them through the machine. Then juice the tomato, red pepper and garlic. Finish by juicing the carrots.

Anti-Cancer Anti-Inflammatory Properties of Apigenin

Foods with ApigeninLast year I wrote two blog posts about the compound, Apigenin. We covered the latest research about this bioflavonoid, (actually a flavone) and how it was showing very promising anti-breast cancer results. Because the information surrounding apigenin is mounting, in this post I wanted to dig a little deeper and present more findings about some of the results other studies are showing. Also I’ll list more of the plants where this flavone is found so you can put them to use in your daily juices and salads.

Reduced Breast Cancer Tumors And Cell Progression

As I mentioned above, apigenin was shown to cause the development of less breast cancer tumors and also significant delays in tumor development compared to rats that were not given this compound. In another study Apigenin was shown to reduce breast cancer cell progression with mice. In addition this compound also shrank existing cancer tumors for even stronger evidence to suggest further research as an alternative to chemotherapy for the treatment of breast cancer.

Exhibits Anti-Inflammatory Properties

As more studies are undertaken to look further into the benefits of consuming plants that contain this valuable compound, recent studies show apigenin to possess anti-inflammatory and neuroprotective properties separate from well-known anti-oxidant effects. One study concludes these in vitro studies provide further evidence to suggest that this compound “may have neuroprotective/disease-modifying properties in various neurodegenerative disorders, including Alzheimer’s disease (AD).”

High Concentrations Available From Plants

Apigenin can be found in a number of vegetables, herbs and fruits. It’s most concentrated in parsley, celery, grapefruits and oranges. It’s also found in herbs such as thyme, tarragon, cilantro, foxglove, coneflower, licorice, flax, passion flower, horehound, spearmint, basil and oregano. Chamomile tea provides an especially abundant source as well.

It’s easy to see how valuable the compound apigenin can be to our well being with it’s health-enhancing, cancer protective and anti-inflammatory properties. It’s also very easy to get these benefits simply by consuming plants that are rich with this flavone. Include parsley and celery in your daily juices as Jay Kordich has been recommending for decades. Add Green Juice To Nut Or Seed Milk

green milk webDid you know freshly juiced leafy greens bring superior quality and quantity to our hemoglobin? This is why people who drink a lot of dark leafy green juices have pure, beautiful white blood cells without any fungus, distortion or toxins in them.

If you can make fresh almond milk or any kind of fresh nut or seed milks, did you ever think of adding fresh organic leafy green juices to them? Shelley Young and my wife Linda made this juice together last summer, and according to their viewpoint, this combination brings high alkalinity, protein and super-nutrients to our bloodstream almost instantly.

Fresh, dark leafy greens brings in the quality and quantity of our hemoglobin meaning they are excellent blood builders. Combined with the high alkaline almond milk, the natural, heart healthy fats from the almonds make this a super-powerhouse of nutrients. Linda and I make the recipe below frequently after a morning workout because it’s light, but highly sustaining. You won’t be hungry for several hours afterwards.

With our PowerGrind Pro juicer, put the spinach through first, then start adding in the almonds and alternate between the soaked nuts and the cucumber, adding water as necessary. Finish flushing through with the celery.  If you don’t have a juicer that makes nut and seed milks, juice all your greens, then set aside. Blend your almonds, then strain through a nut bag, then combine the green juice to the almond milk. Here is the recipe:
1 Cup Spinach
1 cup (soaked) Almonds
4 ribs Celery
1 large Cucumber
 (If you want it to be a bit sweeter, add a golden delicious apple while juicing.)

Reduce Heart Attacks With Strawberries & Blueberries

A new study is showing evidence of reduced heart attacks among women who ate at least 3 servings of strawberries or blueberries per week. A cup of raw strawberries contains only 50 calories yet research is saying it’s jam-packed with disease-preventing nutrients.

Strawberries and blueberries are becoming known to contain a powerhouse of beneficial nutrients for us. This study takes a look at Anthocyanins, which are antioxidant compounds called flavonoids. The colors of red, orange, violet hues, these come from anthocyanins and are now being singled out as important for our overall health as demonstrated from this study and others.

Decreased Heart Attack Risk With 3 Servings Per Week

This new analysis comes from the Harvard School of Public Health where the researchers used data from an 18 year look at 93,600 women ages 25-42, known as the Nurses Health Study II. The purpose to was determine if there was a relationship between the amount of anthocyanins and other flavonoid intake and the risk of heart attack. The women were considered healthy at the beginning of the study and were asked to fill out food questionnaires every 4 years. Over the course of the study, 405 heart attacks were reported.

Berries Study InfoThe researchers compared women who ate various servings of berries per week or month. The data shows a 33% decrease in heart attacks among those who ate at least 3 servings per week of berries versus those who ate one serving per month or less. Dr. Aedín Cassidy, the lead researcher said, “We have shown that even at an early age, eating more of these fruits may reduce risk of a heart attack later in life.”

Reduce Blood Pressure by 12%

The scientists believe the anthocyanins are responsible for the lower heart attacks not only from the results of this latest study but also from others that have come before. In 2011, research from the UK’s University of East Anglia Medical School studied 87,242 men and women over a 14 year period. During that time frame, those who had the highest consumption of anthocyanins – mostly from eating blueberries and strawberries – were 8% less likely to have high blood pressure when compared to those with the least anthocyanin intake. Additionally, participants who were less than 60 years old had a 12% reduced risk of hypertension.

Juice Your Berries. It’s Simple!

From a juicing perspective, it’s very easy to incorporate berries into your diet by simply putting a handful into your PowerGrind Pro juicer while making your juice combos. Another idea is simply to replace pie and cake desserts with a bowl of sliced strawberries and bananas.
