Spinach Power For Eyes And Cancer

Looking for an easy way to green-up your juices and salads?  Spinach is one of the Kings of Green. With the ever present tubs of organic, washed baby spinach at most supermarkets, what could be simpler than throwing a handful of spinach into your juice combinations or salad mix.

Numerous studies are showing the benefits of spinach and more research is on-going. Cardiovascular disease including stroke and coronary artery disease. Cancer, including colon, lung, skin, stomach, prostate and breast cancer. Eye health including cataracts. It may also help with age related cognitive decline.

Spinach is packed with nutrients like carotenoids and antioxidants. It is an excellent source of vitamins A, C and K, Coenzyme Q10, B vitamins, iron and omega 3 fatty acids. It’s one of the highest sources of chlorophyll with 300 to 600 mg per ounce. Some of the research is just beginning to look at prevention and treatment of liver cancer, skin cancer, and colon cancer with regard to chlorophyll-containing vegetables and especially spinach.

Eyes are seeing the power of spinach as well. Studies are pointing to compounds in spinach that may help with macular degeneration, known as AMD. Carotenoids such as lutein and zeaxanthin are associated with less risk for AMD and spinach is loaded with these important nutrients.

Jay uses spinach in many recipes that are fast and easy to make. One of his favorites is called Potassium Broth. The recipe:
- Handful of Spinach
- Two stalks Celery
- Handful of Parsley
- Two or three Carrots
- Half an Apple, optional

Thank you , I get very excited watching Jay and Linda juice. I am just learning and I have a few recipes but need to work on how many juices per day and what else to eat? Grains?
